When do you sculpt the inside of the mouth

Ive been sculpting characters for a little while now in zbrush and I want to start making my characters production ready. I know a few of them will need to open their mouths which I did not sculpt them to be able to do. What is the best way to sculpt the inside of the characters mouth?

It’s usually done by modeling a ‘mouthbag’ in your main 3d app when your topology is finalised.
So the innermost loop around the lips is left as an open hole and extruded inwards to create the pocket.

As musashidan said, the border edge around the lips gets extruded in after you have retopologized. After that I usually block the rough shape before sending it back to zbrush, where I set up a polygroup for the upper lip, lower lip, and throat/mouth. That way you can easily make adjustments to get the final shape by isolating the polygroups or by using auto-masking by polygroups.
