Ok…Lets make a start then.
I have chosen to do a local legend from the North East of England.

Basically. Its a story of a man who catches a weird fish from the river Wear. A strange old man tells him to keep the fish. He carries it for a while then decides to throw it away. So he throws it down a well. Then man has to go away crusading. While away the fish (which is a worm or dragon without legs/wings) grows and grows to an incredible size. Then gets out of the well and terrorizes the land and no one can defeat it. In legend, It lives on either wrapped around an island in the middle of the river Wear or around a hill below a local monument called Penshaw. The Man returns and defeats the worm using a specially made suit of armour.
Key elements from the legend i’ll be taking inspiration from.
Fish Description:
Great big Teeth, Mouth and Eyes
Sticky slime
Venomous Vapours
I’d rather keep the creature as a worm/fish rather than a dragon. After some quick research of marine life. I have decided that the creature he catches could be some kind of Deep Sea Fish that has strayed up a river. The Slime will become Oil and the Toxic vapours will become steam.
Deep Sea fish that instantly sood out as good reference for this are the:
Fangtooth fish
and the Viperfish
Heres some pre-vis. I prefer the first image as a concept for this brief. As its a bit less organic than the second one. And I’d rather do something I can make non symmetrical
