I often see other renders with other software where they use a simple HDR and I see those real shadows as if they were casted by real lights for example a directional light. How is this done? Can the emit light in the IBL node achieve this in Maya?

You mean like the results you get in vray and arnold with dome light?
In maya 2015 the emit light feature on the mental ray ibl finally got updated to use the importance algorithm so you no longer have to use any string options to get this feature.
To get hard shadows (regardless of the renderer) you have to make sure the lights in the hdr have a high enough intensity.
