gnonom rigging for production practices

Can we rotate the bones to set character in rigging pose ,or we have to use orient bone for gnonom rigging. Though i now everything(orient bone) about it. I can also choose skinned rigged pose which is given(though its skinning is also difficult which i have tried,but it is good to learn this type of skinning). Do we need both hands at same angle (or some shifting is allowed).
Though i have done production rigging from digital tutors. i want to learn production practices type of rigging.

I am not doing this now but i will do .I have started sitting 7 hours a day now.
