I know this problem has been asked here before but I can’t seem to find a solution that works for me. It’s a very simple problem. When I smooth preview my mesh and then try to UV it, the UVs come out looking distorted, the edges curving at the seams. It happens with every mesh I create. Even with something as basic and unproblematic as a simple cube with nothing but edge loops to define the edges. I deleted the history of the cube as well. I’ve inserted a picture below.

Thats cause the uvs gets also smoothed to prevend distorition on the surface.
if you dont like that behavior trun off smooth uvs.
I like that behavior you get much cleaner objects this way.
So don’t smooth-preview your mesh.
Use a geometry smoothing node instead, and never press 3 again. That’s pretty much just an old workaround for computers that couldn’t handle an active smoothing node.

Ive heard that severally but where can I find the option to turn off Smooth UVs in Maya 3018?

select your object go to the Atrribute Editor --> Smooth Mesh tab --> OpensubDiv Controls --> UV Boundary Smoothing --> None
