Just wondering if there are any general techniques to creating quays at the top of a cylinder? I’ve been at it for about two hours and can’t seem to figure it out. Any help is appreciated.

The most common way I can think of to quickly achieve all quads for the cap of a cylinder, is to first start out with a primitive cylinder with an EVEN number of sides around the center axis.
Then you simply delete every other edge around the pole like this:
You then have a top of 100% “diamond-cut” quads.
Another way to look at it would be something like this. To have more definition, you have regular cross hatches across the top, while then keeping your diamond cuts in the corners:
