Still learning XSI here. Is there a way to convert displacement to polys in XSI like you can with Maya?

If you want to convert what’s being rendered, then you gonna be using the SaveRenderMesh from Andy Nicholas

There is other interesting tools for displacement on the repository http://nycg.org/
If your thing is push a surface with a map, then you create push operator (model>deform>push), create a texture map (render>property>texture map>texture map). Then in the Push op you can plug the texture map.
Thanks TC, SaveRenderMesh appears to do what I need (close enough anyway). I did try the push operator but I’m working with DEM data and wasn’t having much success.
