I don’t know that there are a ton of books that cover it that well, but there are quite a few videos.

In terms of the books I can think of off the top of my head:

There’s Carlos Huante’s follow up to Monstruo. I think it’s called “Mas Creaturas”. The front section is him walking the reader through his process.

I don’t know if it’s still available, but Jordu Schell also recently released a PDF of his design theory and process that I’m told was pretty amazing. In my opinion, it doesn’t get much better than those two guys.
