While it is an interesting twist to the monobike design, I think it would only be plausible if the “cockpit” is of a lighter mass compared to the wheel assembly, otherwise the vehicle will just topple over the opposite side when it makes a turn, or slide out of the turn (something to do with leaning over to balance against the centrifugal force in a turn).
Therefore I agree with the preference that the cockpit to be an open seat with handles only, and the rims to be more massive and static to the base of the seat (only the tyre spins, not the rim).
OR, we could just chuch physics out the window and go the Speed Racer route
