just wondering do you guys still use polymodeling then you subdivide your mesh or do you use subD with - and + option?

Switch back and forth. Start modeling with polygons, add edges/ polygons in polygon mode, then check what it looks like subdivided. Switch back to poly mode and refine.
Doing the whole modeling in subd mode is annoying in my opinion. Checking the edge flow is much easier in poly mode, also e.g. where exactly to click when adding edges.
