Rigging trouble

I chose to follow this tutorial from autodesk Maya

the problem its that in both arms, the joints of the uparm rotate from -1 to -180 from 1 keyframe to other if the geometry its gonna touch, so i really dont know what to do, please help

I made a chain like in the video of 6 bones on the uper arm, then i crated a curve of two points and then finally create an ik sapline using just that curve and the bones so the spline wont bend, just for using the advanced twist controls, but the thing like i explian early its that the uper arm breaks with and extrange rotation of bones
