Is using real world scale necessary, or just modeling everything proportionately to your characters? I’m just curious if other animators have thought about this.

It depends on the type of animations one is creating.
Many physics systems such as rigid body dynamic solvers
are based on real world values when determining important factors such as mass so your scale
can be a factor in such scenarios.
Most of my scene assembly is done at a scale to match my Characters.
However I have had to re-scale entire scenes ( via a Null) for the aforementioned reasons.
