Can't convert to .flv without choppy quality.

I’ll make it short. We need to covert videos to .flv to upload to our portfolios, but when I do I lose quality and can only have it in 720x480. Can someone give me a walkthrough on how to convert to .flv without losing quality or making the video frame size smaller? Please I am very eager to post my latest works.
