question regarding modeling detail

I was wondering lets say I modeled a hand or a head or something and I wanted to add veins on to it,
how would I do that?

By using add points and then split? what if then I **** up and my head isn't subdevidable, there is no way to triple or quad any of the improper polys automaticaly is there?
Or do I just have to BE EXTRA EXTRA attentive of what I split?

Use the Statistics window (w) to easily select the "bad" polygons. Just click the "+" sign next to the "> 4 Polygons". This will select the polys with more than 4 vertices. Triple them or whatever to get a Subpatch model.
