Question about masking objects

Hey guys - working on a Universty project currently and I'm having a problem trying to hide some geometry. I have a lid of a cereal box with spherical eyes underneath it, and I need to try and hide the top parts of the eyes whilst animating the lid (which in essence is also the eyebrow line).

I'm using Maya 8.5 at the mo (I can switch to 7 if need be) but the only help I have been able to find is on modifying a mask channel...which I can't seem to control at all. I basically want some control of vertices so I can mask parts of the eye at different times as the expression of the character will be changing a lot.

Any help would be great - I figured there'd be some thing that would allow me to apply one piece of geometry to another as a mask...but I can't find this anywhere.
