Question Animated model slicing with depth

If you remember the simpsons tree house of horror 2. Burns slices Homer's head open with a circular saw removing the top of his head. That is pretty similar to what I'm trying to achieve.

An object that is hollow but has depth to it. A visible edge that would seperate the outside from the inside.

I know a way of achieving this with a paper thin look but it really needs to have depth otherwise it looks lame.

give the head some thickness and then use a boolean.
