SSS is the way light behaves when it hits the surface of an object. Depending on the surface, light will travel through it becoming scattered and illuminating the surface. The best way to illustrate this is using the flashlight to the hand example. When you hold a flashlight to your hand and turn it on, you can see how the light illuminates through your skin; this is sub-surface scattering.

There are some really great sites out there that will give you a lot more insight into the science behind how this principle actually works.

And I happened to stumple upon this very cool tutorial using Z-Brush and Max. I not sure what his name is but he shows you how to setup a basic but convincing skin shader. He has a few tutorials other that deal with SSS in Max as well.

hope this helps
