Overall:

Next thing to model is the chest. Then onto texturing unless anyone sees anything standing out? I think since I light on 50% grey maybe I should light before texturing because that way I can fine tune the shaders to match the lighting and not the other way around?

Hey man,

Looking about 100 times better than when you started! The model still looks a bit rough. It might help to smooth things out and add subtle bevelling on the edges to help get edge highlights.

How you organise the texturing/shading/lighting work flow is up to you, and however you feel would work best for the shot. Its just important to think about it, make a plan, and try to be as efficient as possible.

oh, and make those ceiling beams thicker...

Cheers for that, everything I make looks beveled once smooth, I just don't actually use the 'bevel' itself. But that's just out of the viewport.

Ceiling beams are probably thicker than the picture you posted, one of them has a really dark shadow under it making it look thin as heck and the other is obscured.

Thanks
