How do you make realistic hair?

I am trying to figure out where I can find the answer to this question. I have been struggling with hair in Maya for quite some time and would really like to be able to master this art. I know how to create hair follicles using curves and play with the settings and dynamics to get a certain style, but the problem is it never comes out looking like real hair. It always appears overly shiny, stringy, wirey, and never renders with the soft/flowing look that I'm hoping for.

The solution is not simple, and it is clearly not in the hair particle settings or I would have figured it out by now. I am certain that it has something to do with the shading/texturing and how it is interacting with the lighting of the scene, but I don't have the first clue what I need to achieve the look of REAL hair.

I've watched a lot of tutorials and none of them tell me what I need to know. Maybe I'm not watching the RIGHT tutorials. So if you know of any that will teach me what I need to know about shading/rendering hair that actually helped you, please provide links. I've done enough Google searches to know that I'm not going to find what I need that way.
