Better Camera Controls

I was wondering if anyone knew how some of the studios out there control their cameras. Specifically, I love the way Zoic Studios has been doing their shots since waaay back on Firefly and then on BSG (which is pretty much how everyone seems to be doing it now).

The problem I'm having is that when I don't use a path, the camera gets herky-jerky (but not in the first person cool kind of way), and when I put it on a path, I get smooth movements but lose the ability to point the camera the way I'd like. I'm a live-action filmmaker so I'm accustom to being able to have the best of both worlds --provided the camera grips are in a good mood

Are there any solutions, tutorials or even a plugin that helps solve this dilemma?

When you make a path animation don't
put the camera on path but put it in group
and that should go on motion path, than you
will have all the controls of camera.

Also check out Craft Animation here. They probably have what you want. Unfortunately things there have slipped as of late and they don't have a Maya 2013 version. Recently (like two weeks ago) the original owners took back the company so it should be back in step in a few months.

Off topic, I don't get the camera in FireFly. It zooms in too much on the characters, and it jitters like the production didn't have money for more than a home camera.
