Functionality question

This appears to be the most appropriate place for this.

Here's a fairly basic question that isn't easily googled: Is there a way to easily achieve this (pic related) in max?

I want to take an object, select edges across it, and separate the two halves at the edges, but instead of cutting the object, it would instead produce new faces in between so as to "stretch" it. What would you call this?

Symmetry modifier? Animated slice on two objects? Morph? Hard to say the best method without knowing more about it.

Well, if you are just trying to model and not animate this, I would probably just select the top half faces, detach to element, move the top faces up, select the the two borders and use bridge.
