Organic Modeling from Ortho to Perspective

This is bothering me. Basically model looks like fisheye lens when modeled in Ortho. We take pictures with a 35 mm lens. That's a high perspective angle of view. So when you model in ortho, in blender at least, it pretty much is close to a 200-260 mm lens.

This is a problem because then your model looks like a 15 mm lens in a 35 mm world. I don't understand how to quite model in perspective. When you move around your model doesn't match the reference. So that kinda gets thrown out the window too.

I know that models don't have to match up perfect to reference but I'm doing a project where I actually want them to look exactly the same.
