Tutorial Question

On part 3 of Glen Southern's head modeling tutorial ( found here ), what is he doing in order to make that mouth? He says a loop but the only loop tool I see would wrap around the head. I tried bevel but that can't be right ( and if I tried to use it it would create all sorts of UV issues). Tried extruding but ran into UV and geometry issues there too. Just not sure what is going on there and he just sort of passes it up.

What i see is an extrusion then an inset scale (or local scale)... anyway if your geometry explodes there, try deleting half the head and mirroring again, maybe you have some stray vertices around the middle seam.

EDIT: forget about the UV's until you've pretty much finished modeling, then focus on unwrapping.
