Problems with color

Using Adobe Illustrator CMYK and I'm having trouble with skin color for a caucasian figure. I work with two monitors a good one and a not so good one pick colors from photos with the eyedropper to 5x5 and then use the color guide that I'm assuming shows the correct lighter and darker shades of the color to account for shadows.. Depending upon what I pick the skin color will look radically unappealing in the not so good monitor for example strong caucasian flesh to vivid orange or pale flesh looks completely washed out and white. I wonder how others get around this a make skin that will look decent in a wide variety of monitors

Have you tried painting it on layers and then varying the opacity? Sometimes just painting at 100% is a bit strong no matter the colour.
