Lets say for example that I want to texture a hand model. I'd have a planar map for the palm of the hand, another planar map for the back of the hand, and cylindrical maps for each of the fingers. Does anyone know any tips or tricks to make sure that seams don't show between the different maps in the final product?

Actually, I find there really is no need for the cylindrical maps for the fingers - 2 planar unwraps should actually suffice perfectly.
All you do is edit your planar unwrap so that the polys on the sides are completely flat along with the rest of the projection. Then you paint the top (or the bottom one, whichever you decide to do first) and then just make sure in Photoshop that any colour which is going to overlap into the other unwrap lines up :)
