maya > mudbox or zbrush > then maya? Is this a popular 3d modeling process?

Yes. Typically you will want to create your base mesh in a normal 3D modeling app (Max, Maya, Lightwve, Blender, etc.) and then take it into Mudbox, Zbrush, or 3D Coat to add details, then you can save out your normal maps/displacement maps and apply them to the base mesh in your modeling app.
