try this as a start
it's a comprehensive 5 dvds with 3 of them if i remember focus solely on building human anatomy from the skeleton to the muscles of the fingers and toes
the last two was quick timelapse of the instructor Riven Phoenix drawing about gesture, line of action and shading etc
and i quote the above:
draw. a lot.

It may sound like a trivial suggestion, but I'd recommend you pick up a couple of inexpensive "How to draw cartoon Superhero" books and work through those.
Obviously it won't be accurate representations of the human form BUT it will at least get you comfortable with drawing a style of the human form.
From there you can focus more on accuracy.
The idea is to get comfortable with drawing the various shapes easily ("draw a lot" from above) which will then give you the base to set your desired physical accuracy upon.
Just a thought...

I can vouch for this set. Very comprehensive and if you need focused study its good because you are basically guided step by step through the process via the videos.
I also got a lot from Dynamic Figure Drawing by Burne Hogarth (http://www.amazon.com/Dynamic-Figure-Drawing-Burne-Hogarth/dp/0823015777). This isn't the easiest read but it is very professional with great examples. Not to be confused with Dynamic Anatomy by Burne Hogarth. Dynamic Anatomy is more a theory study of anatomy, where as Dynamic Figure Drawing is more practical application.
Oh and don't forget to draw... a lot.

Artistic Anatomy by Paul Richer is pretty good. Old but still useful. The first half of the book is almost entirely text.
You can find the french version online.

I agree with sizzle. Observe and draw. Draw a lot. Draw until you're sick of it. There's plenty of images to work from online for free. Web search body builder images and you'll get plenty or references. Also check out sites with images by people like Todd Macfarland ^sp :argh: , Frank Frazetta and Simon Bisley. Comic and poster artist of this type are generally very detailed when it comes to muscular structure.
Reproducing images in your own hand will take you conceptually further as you work in zbrush. That's my 2 cents.

(Optional: Gym membership to more clearly understand the muscle groups.)
Stand in front of mirror. Proceed to remove shirt, pants and briefs.
There ya go.
