Hi, I am new to animating in maya and was wondering if anyone could help me with how to choose the different types of locator shapes like the arrow, x, and so on?

I"m not sure what software you're using, but in Maya, locators only have one shape. Other shapes are usually generated with nurbs curves. You can make them yourself, or find scripts to create the different shapes. There a bunch of those out there. Also, if you want letters and the like, you can go under the create menu, and click on 'text', type in what you want, and have it export the text as curves.
