I think you can optimize your workflow alot.

First do some research on scripts and plugins that come in handy. Hava a look a craft director tools, esp the airplane FREEBEEE!... you can use a gamepad/joystick to fly the plane.. in an hour or so you'll be dogfighting yourself with realistig movement and no hand-done animation at all :) There's a few days work avoided.. or a few 1000 bucks saved there if this was a commercial project.

At first just make some ruff lowpoly models, just a box with wings.. dont spend more then an hour on this. Make an animation with that.. see what works and what not. This way you can quickly test how transitions from shot to shot will work too. Use simple materials for this too. lowpoly models animate a lot quicker too.

Now you know how far away or close up some stuff will be, what texture detail to use etc.. big chance that those rigged vector nozzels wont be in view at all, not a disaster for a hobby projects.. wasted time/money on a commercial one.

When you happy with it all.. start detailing stuff out.. lighting, special effects.. motion blur, camera DOF.. go crazy with the cheesewizz!
