Is it possible theoretically to generate more than one UV map for an object?

It's beyond theoretical- just try it...

You must excuse my ignorance--I've never done this before and nothing I've ever done in Maya ever suggested that this was possible. The only "multiple UVs" tutorial I ever found was for Modo and it was very unclearly written. I'll do some poking into it, then, though any guidance as to how this might work in XSI would be appreciated.

In XSI, it really is just as simple as applying a UV (let's say spherical), then applying another (let's go with Planar XY) in the same manner.

Simply try it... it is the way all apps should work.

I wasn't being sarcastro on purpose- it really is that easy. I think many programs actually let you use more than one UV projection per surface- just depends on how they do it I guess come render time...
