besides fixing the bg image of course under the strokes, what can I do to make these paint fx look more realistic?

maybe a blur? most of the grass in the picture that isnt painted looks a lot less sharp than the paint effects to me.

There's an attribute (cant remember the name)
in the paintFXShape node that makes each base of the strokes blurry.

I don't know of a way with PaintFX - but depending on what you're going to use this for:

-if it's going to be a still, you could reduce the saturation of the yellowish field just a tiny bit in Photoshop - I mean desaturate it deeper in the picture. Dilute it with some grey, maybe? ... experiment, I have nothing ready but I know you can add depth that way. Also maybe some variation to the shade of yellow - but that depends on what it is. Maybe some different weed to stick out from the yellow field? Some of it dried up?
