Hi dude,
make sure your model is in a T stance pose or a bind pose.
Srart laying down the skeletons pretty much the way they are in real llife. some khowledge of anatomy is very handy here.
After laying down the skeletons comes skinning. you have to tell different parts of your mesh (Each individual vertex) how to behave when you rotate a joint via FK or move via IK.
Then you have to set up the rigging. this process is basically building the structure of movement for your character for example IK rigging for hands and feet.
Remember in order to make a sensible workflow you have to engage a lot of things to make animation easier, like set up driven keys for hands so when you change parameters for a FIST all the joints of the fingers rotate in natural manner rather than rotating each individual joint which is a nightmare.the more you put automation into your character the more you gonna have fun during the animation process.
good luck

To rig a Mech you simply parent the bones to the mesh. High end 3d has a tutorial called star wars walker that will show you how.
