steven tubbrit has a very good eye modeling tutorial, but i don't have the link at hand! Do a quick search on google!

I'd strongly advise looking at a medical book, or some sort of schematic of the eye.
It should have at least two parts. The lense, and the eye itself.
If you download the video in my sig, about half-way through there it shows a way to quickly model the eyeball and iris. The lens(cornea) is a sphere with a bubble over the iris. That's the most important part, because it's the refraction of that lense that makes the eye look right.
This image is from a long time ago, but it should give a general idea of what I'm talking about structually. It may also make sense to create a seperate model for the iris, so that you can animate it contracting later.
