Would I need to put in a skeleton or would parenting be sufficient for a Mech character, since I dont need deformation at all...
How have some of you done this in the past?

You still need a skeleton, but you don't need to skin. Just build the joints and orient them. Attach controls and parent the geometry. Easy as pie.

Although parenting works, I would recommend rigid binding. Then you can keep all your geometry under one node. And the skeleton parts under another group. There are many beneficial reasons for this, but the most important is that you don't have to go diggin under joint nodes to find a specific piece of geometry, if you ever need to.
