What's the most practical modelling method for modelling an animatable human/creature head?

I've read about having to stitch together nurbs parts and if you animate the figure you can see the seams, so nurbs aren't for animating.

with nurbs?...don't know
for polygon...in max...best is morph.

i would definitly say polys and also you want to use edgeloops to get the proper deformations. You should check out, ambient-whisper's modeling vids. They will explain alot. Especially check out the freak modeling vid he has.
