Easiest way to assign a hotkey is to look at the command history item in the lower right hand corner of the UI. Drag the "Command" ui to expand it and see a complete history of the commands you have used in your current session.

With the ui expanded, run the command you want to bind to a hotkey. The last command fired in the command history is what you want to bind to a hotkey. To do this, right click on the command you want to bind and press "Map Command to key..."

You will also notice a bunch of other tabs like Scripts and Commands. Once you know the name of the command you want to bind, you can also look up all the associated options with this command in the commands tab.
