I'm kind of new, so i wonder if i have to place the spline points in some special order or something? Or can i just place them where i want them? And, can i use the Bezier spline?

Looks like a great tutorial!
If I see correctly the splines are only used as reference and the final surface is built with polygons and a meshsmooth modifier(subdivisions). This means that you can place the points on the splines where you want them, as long as the spline has a fluid shape.
You can indeed use the normal Bezier splines, I wouldn't try using NURBS curves or anything.
