Deep muscles

I think you answered your own question :) Most artists that I know pretty much ignore the deep muscles unless, like you say, they affect the exterior form. In fact, most artists simplify even the surface muscles (combine some muscles etc.). It depends on how much detail the artist is trying to achieve.
