Hi there!

I'm starting myself into the 3d thing, and using max. But one of my big problems is texturing organic models, like heads, for example. For example, how can I do UV maps like this? Do you know good tutorials on doing this? I've tried to do something with Unwrap UVW and Texporter, but all those "Stitch Selected" are a big drag, and when you think to do it subdivided, u get sad.

help me! (I use Max 5)

First, most folks UV the pre-sub-divided mesh, what some call the "control cage." The UVs on this are propagated into the new faces, as long as the cage mesh is made well. Things to be careful of are lots of triangles or >4-sided polygons. Try to use all quads, or at least as much as possible.
A good thread on Spiraloid about this issue:
In praise of 5 sided polys ( Don't worry be happy )

Chris Kniffen has a good tutorial for head UVs. Done in Maya, but the concepts translate well to any program.

The Relax UVs in max is not as good as Maya's. Carl van Heezik
has the best attempt so far...

Chuggnut has another stab at Relax, plus some other really helpful UV tools. I use these every day.
