pica$$0 09-12-2003, 08:48 PM I've been through many tutorials and don't seem to understand the term Edge loops and poles. Can someone please give me a clear definition and why it's important?

Yeah, nice diagram. Although poles can also be anywhere a loop terminates, which happens when it hits a non-4-sided polygon.
In my experience, poles can produce pinching in the sub-divided surface. Also UV problems sometimes.
