A while back I made a rather handy (if I may say so myself) tutorial on how to create spherical environment maps from 360 degree panoramic imagry. In this case I used a file from Bryce, but you could apply the same techniques to any image that you can stitch together with a digital camera and the included pano stitching tools. Just follow my steps and you can smooth out the polar regious and have a nice, tasty map.
Blur it up, or whatever and you are ready to make some nice environments.
