I will be using this this box to do work from home on Art Assets for Film, Game, and Engineering. I need to know that all hardware will work properly in the current configuration, and if there is any suggestions for making changes to the hardware to get the best performance. I want to keep my budget under $3000 including taxes, so please keep that in mind if you suggest additional hardware to add or swap out.
OS: Windows 7 Ultimate
* I was told to run linux and emulate Windows 7 and run 3ds Max 2011 that way, not sure completely way, maybe something to be with rendering or how the read/write works with 3ds max. Any insight on this would be appreciated.
Software:
-3ds Max 2011 - Modeling, Animation, Compositing, Particle Effects, Texturing, Scene Layout, and importing Engineering Data)multimillion poly- high
-Mudbox/Zbrush - High poly sculpting/texturing
-AfterEffects - Post-production
Minor Audio Recording - Personal use
There will be some lite gaming on this as well, nothing that needs to be amazing. Just to occupy downtime and test art assets.

After reading on the boards I see people have been suggesting the Ati Radeon HD 5870 and Nvidia GTX 260.
Which card out of the ATI 100-505558 FirePro V8700 / Nvidia GTX 260 / Ati Radeon HD 5870 would I have the best results for stability, functionality, GPU-based rendering, and longevity.

I'd say the ATI 5870 or a new geforce but not the 2xx series since the 4xx came out- go with the 480 but I don't know how well they work since I bit the bullet early and got the 5850- But I'm sure it'll run great. Heard more negative than positive regarding the Fire 8700

I have read the same thing about the Fire8700.
What would be a good workstation GPU to use, the price is about 2x, but I am not seeing a performance increase from desktop cards to swing me in the way to want to purchase one.
As for the 4xx gtx, I am sure they will be high cost for new product release, thus the price reduction for the gtx 2xx series, I can always upgrade the card later.
Can anyone point me to a great comparison article from workstation GPU's and desktop GPU's? And the reason one is better then the other?

GTX260 is still best bang for your buck on the NVidia side. It's confirmed stable in all major CG applications on Windows x64. The problem is, that it isn't easy to find that card in stock these days, it has become very popular and most companies are opting to produce the slightly higher end cards and the new 400 series cards which are on average 50% - 100% more expensive but not necessarily 50% - 100% more powerful. If you end up going for a 400 series card, make sure you get the nod from users who have the card and have tested it thoroughly on the applications your planning to use it with.

I think I might knock my case down to a non-Aluminum case to save money. Not sure though.
I am still not concrete on these specs, if you have any input, please help me out.

is that ddr2000 ram cas 9?
IMO the point of getting ddr 2000 is worthless unless it's faster than cas 9
Otherwise get 1600 cas 8 or 7
and really, ddr1333 cas 9 is completely fine. We're talking like a 3% difference in performance for what'll end up costing an extra $120-140 if you're getting 12 gigs
the higher end memory IMO is mainly worth it if you plan big overclocking. If you're sticking with stock speeds, don't waste your money on faster ram. Get a faster hard drive or something instead

Those wd drives won't run at sata3 specs due to its mechanical limitation. Just a heads up since I have no idea what you had planned with those.
You should also look at the Cooler Master HAF 932 (full tower) or Cooler Master 690 II Advanced (mid tower) in case you plan to get a cheaper case.
Also agree with just getting ddr3 1600 instead.

How much is the GTX 285? I ask because, since that card is usually $400, you might at that point, be better off stepping up to something in the GTX 400 series. You would get access to DX11 as the 200 series is DX10. As well you'll get a little bit more performance out of the board in most cases. If it was between the 260, which is often half the price of the 285 and less than half the price of anything in the 400 series I'd say don't change it. Anyways, if the 285 your getting is a great value price wise then ignore the above, DX11 isn't a requirement or anything like that, it's just a value/cost concern.
