I think you should go for a subsurface scattering shader. Maybe the Fast SSS shader will do the trick. There is also a physical SSS shader in mental ray, but this one needs photons is not very artist friendly, since it seems one has to be physician to get this damn thing to work. There is also a "diffusion" shader over at mymentalray.com which does essentially the same as the fast SSS shader, but without the need computing light maps...

generally ,it's a good idea to look at what others have done to create shader's similar to what you want and create your own.if you want ice then you can start with something like a glass shader, and tweak it with different bumps, glossiness and what not. most of the times just taking someone's shader and slapping it on geometry wont give you desired results.
i did see a chocolate shader over there...

Yeah, SSS is the way to go.

I did sth like that some time ago. If u want i can look up for my mat settings.

Maxmit - done in 3Ds Max, rendered with mental ray.
Here are my shader settings. Pretty straight forward and it was more like a trial and error process and looking at reference material as i went along. As for SSS its important you have your model in the right scale. All three ice cream balls combined make up like 15cm in my scene.
My scene was lit with a key, a fill light and one sky light and rendered with FG on. I used an HDRI for environment reflections. The model it self had a displace modifier with a noise map.

and for the map in the diffuse channel to represent the strawberry jam

Its not perfect, but it worked for me at the time. Hope that helps :)
