I'm afraid I don't know pasto!
I've only ever used Maya on Windows.

In your directory:
Users/"Your name"/Library/Preferences/AliasWavefront/maya/5.0/
there should be a Maya.env file. Edit it (or create a new with a texteditor) and add the line:
MAYA_MRFM_SHOW_CUSTOM_SHADERS = 1
That should do it.

The info on MentalRay custom shaders are rather spares so youŽll have to search cgtalk and highend3d forums for info.
There are two books: Rendering with Mental Ray and Programming Mental Ray if you want to dig deeper.
