I want to know the best way to match the lights and colors from a real photo shoot.
I now do it manually by adding similar lights but this is much trial and error.

Is it better to shoot a hdr 360 panorama and use it as light source or is it any better method?

As far as I know, IBL using an HDR image should be used to support existing light(s) in your scene to add realistic indirect lighting, as opposed to lighting the entire scene by itself.
