CGTalk - (polygon to subdiv | subdiv to polygon) question

Hi all, anyone could help me...
I'm using Maya 4.0, and I'm using (polygon to subdiv | subdiv to polygon) modeling method, my question is how I can make my faces planer again after I have convert it from subdiv to polygon?

edit polygons -> normals -> soften/harden
