Hot Key for Default Lighting?

ctrl+L will toggle default lighting in the active viewport, and as far as i know, ther aren't any controls for it, although i can't say i've ever looked for them, so i may be wrong there

There are controls for default lighting.

Viewport Configuration: Rendering Method: It's in that panel.

You can play with the defaults to set either 1 or 2 lights, and also toggle it from there....

ctrl-L should do nicely though.
