Hey ya'll I've been working with this technique for awhile now and it's very helpful for creating new topology/mesh on a model or adjusting for deformations. I put together some video tutorials to show.
Basically, project the shape from one mesh onto new topology. Because of the history in maya, when you move verts, they will stick to the shape mesh retaining the shape during any edits you do. This is much better than maya live because you can translate, rotate, and scale a large number of verts and they will keep their spacing.

Another good thing about this is, you can use Split Polygon Tool to cut in new edges to match concave or convex surfaces better. To make this step work correctly, after you cut your new edges, use Non-Deformer History instead of straight up Delete History and the Transfer Attributes history will remain. This may sound confusing but just do it and it'll make sense.
I apologize if the video quality isn't the best, i admit i'm not the best with camtasia and premiere to flash. I'll reupload the videos if i can encode better.
