I get the same visual when I extrude face>apply 3d texture>polygon smooth...
Very sad indeed, or maybe I am wrong...:cry:

Of course I don't know for sure, but...
I would guess that it is your graphics card, and I don't think you'll find a fix, short of getting a new card.
With that said... What kind of graphics card do you have?
You might want to try with different settings (in the control panel for the gfx-card) and ultimately with different drivers for your graphics card.
If al that doesn't help, try another card, have a look on the Alias site, they have Qualification Charts that specify what cards were tested and qualified http://www.alias.com/eng/support/qualified_hardware.jhtml

If you are using Maya5.0.
I have the same problem on my GeForce Quadro4 750GLX with the certified drivers (43.51).
I think this is a Maya5.0 bug and I have not found any workaround.

I thought it was clear on the thread I posted:
It is a bug in Maya 5.0. No workaround yet. Very annoying.
It is in Maya.digication, user to user discussion forum in Alias etc.
Mark told me it has been reported to Alias, though.

wow how annoying. It only happens on my home computer. My graphics card is admittedly pretty crappy there (geforce2 gts pro w/ 64 megs of ram). It happened when i attached the ear to the head mesh. In any case it's good to know it's a bug... i guess. :hmm:
