SO I have a few simple, low-poly characters I modeled. I want to create vector based textures that I can animate for their faces and stuff. What's the best way to go about doing that?

Try animating the U and V directions of your UV

Funny you should mention this, as I was just thinking the same thing concerning two of my characters. While the UV solution can work, and it is the most doable, it certainly isn't the most convenient or easiest method, imo. I think someone needs to write a plugin for this, allowing Maya to fully import illustrator files (including fill color and line color), and allow them to be used as texture maps.
